More than 60% of cheese produced in the Netherlands is Gouda and there is a whole lot more Gouda being produced all over the world, as Gouda is not a protected name.
This black waxed 6 months old has a smooth firm texture and a deeper yellow tone and a richer fruitier flavour than young Gouda but is still sliceable and not yet crumbly like a vintage.
What with? You couldn’t find a better snack! A slice of baguette and some grapes – voila! A fruity chutney is nice too like Mango or Apricot.
