Comté - Franche-comte
A strong, hard cheese originally made by shepherds in the Jura Massif, Comté is now produced in cooperative dairies known as ‘fruitières’. The cheese from each has its own distinct flavours from the local terrain and flora; these can be nutty, peppery, fruity, sweet, tangy and caramelized.
Comte is aged for at least 4 months before it is graded and marked out of 20. The best which score 15 + are given a green label and sold by us! Our Comte usually is between 18-24 months old.
What with? Like a Farmhouse Cheddar, this gutsy cheese cries out for hearty traditional Pickles and Chutneys. Poachers Pickle or Old English Chutney with Cider always work well with a cheese this strong. It melts beautifully and is brilliant sliced with cured hams.
Most people favour a full bodied red wine with Comte. Go for a Bordeaux, if you want to play safe or try our Rioja Beronia Gran Reserva. It's liveliness and natural spices make it a very good match.
