Ardrahan - Ardrahan Farmhouse Cheese, Cork
A glorious semi-soft washed rind cheese that’s creamy on the outside and chalky in the middle, Ardrahan is a delicious contrast of textures and flavours. Strong and tangy, it develops a lovely buttery nuttiness as it ages. Better still it’s only 25% fat, so you can eat it till the cows come home without doing too much damage to your waistline.
Made at Ardrahan Farmhouse in County Cork, it was first produced in 1983 and sold in France (and the French know a good cheese when they see one!) Today it’s still made by hand from the milk of the Friesian herd that was first founded at Ardrahan in 1925.
What with? Ardrahan is yummy melted over roasted red peppers,onions and aubergines. On the cheeseboard it will be nice with a medium-bodied red or indeed a rounded white wine like our Banda Dorada or a Gewuerztraminer.
